Sensory notes
Colour: A delicate pale straw yellow, with a brilliant luminosity and a dense and persistent frothy perlage.
Smell: Intense and refined aromas, hints of fresh green apple fruit, peach, citrus fruits, honey and young acacia flowers, broom, as well as a delicate bread crust.
Taste: On the palate an intense freshness and a significant sapidity, attenuated by a moderate heat and a decisive rebalancing softness in excellent agreement with the sense of smell. A lively, fragrant and persistent finish.
Vinification and Sparkling wine
A fermentation in temperature-controlled steel vats, followed by a scrupulous sparkling process with the Martinotti-Charmat method and, to follow, we will proceed with filtration to then be bottled in an isobaric environment.
How to match our Prosecco DOC brut wine
A prosecco to be served cold, at a maximum of 4-6 degrees, and with a glass that is tall and narrow enough to appreciate the perlage and aromas, with aperitifs, appetizers, fish dishes, vegetarian dishes, meats and cheeses. We imagine it with grilled scampi, baked red snapper with olives, linguine with sea urchins, ricotta ravioli with butter and sage, dried scamorza from Abruzzo.
