Sensory notes
Colour: It has a bright pale straw yellow, surrounded by an exuberant and persistent perlage.
Smell: The nose recalls elegant and decisive notes of white petal flowers and yellow fruits, broom, jasmine, white peach, apricot
Taste: A disruptive freshness, supported by a magnificent sapidity in excellent balance with a soft and delicate softness. The perceptions are in line with the sense of smell to which is added a persistent citrus finish and mineral notes reminiscent of the sea.
Harvesting
Born in one of the most suitable areas of Abruzzo, from an old vine grown in Tendone, at an ideal altitude to guarantee a formidable temperature range and with a magnificent exposure.
A quality sparkling wine from Pecorino grapes, obtained from a rigorously manual harvest in the first ten days of September, from certified organic farming, which guarantees maximum respect for the surrounding environment.
Vinification and Sparkling wine
A vinification carried out in thermo-conditioned steel vats followed by a sparkling process with the Martinotti-Charmat method for at least 3 months in an autoclave, to then proceed with isobaric bottling and capping.
How to pair our wine Bakán Passerina brut sparkling wine
A sparkling wine to be served cold, at a maximum of 4-6 degrees with aperitifs, appetizers, seafood, vegetarian dishes, meats and cheeses. We imagine it with fried squid and shrimp, ricotta ravioli, aubergine balls or turkey roulade.
