Sensory notes
Colour: bright ruby red with violet reflections and a nice texture.
Smell: intense and fine, with hints of blackberry, cherry, plum and violet.
Taste: the sip is dry and the perception is of delicate warmth supported by an energetic softness beautifully balanced with hardness with freshness and well-blended tannins and assisted by a slight sapidity.
The olfactory sensations are reaffirmed in the flavours, tenacious and well associated with each other, with the addition of notes of humus and delicate herbaceous references.
Harvesting
Coming from an area particularly suited for winemaking and at an ideal altitude for a magnificent temperature range, from over thirty-year-old vines, beautifully exposed and trained in Tendone and Guyot.
Merlot is the result of a rigorously manual harvest in the first ten days of September, of an agriculture that is very attentive to the environment.
Winemaking
The maceration takes place in thermo-conditioned steel vats, at the end of which a malolactic fermentation follows and a subsequent maturation of at least 3 months in the cement tanks before being bottled in the total absence of oxygen.
How to match our Merlot Torri wine
To be served at 12°-14° if possible with a nice large glass and always uncorking it a few minutes before serving, so as to allow it to open well and express itself at its best.
Excellent on many occasions, it is the typical red wine that can be appreciated not only on cold winter days, but also when high temperatures would make us give up our favorite type of color to move towards white or rosé wines.
Perfect with aperitifs, appetizers, savory foods, vegetarian dishes, white and red meats and fresh and medium-aged cheeses.
Let’s imagine some caprese crostini, spaghetti cacio e pepe, an aubergine parmigiana, sweet and sour chicken, strips of rocket or a Bra DOP tender.
