Sensory notes
Colour: A sparkling and vigorous old rose, with a dense and subtle perlage in constant ferment.
Nose: A sparkling sequence of fresh fruits, strawberries, raspberries, cherries, small red fruits, wild berries, floral, aromatic notes, sweet spices in a habitat of delicate lightness.
Taste: A sumptuous and extremely elegant wine, it shows off its intense freshness as well as its refined savory vein. A balanced and tasty taste, rich in olfactory references, is supported by a lively and lasting finish with delicately balsamic signals.
Harvesting
Moon Rosé comes from an old Guyot-trained vineyard located in a magnificent area for winemaking, at an ideal altitude to guarantee a formidable temperature range and with a magnificent exposure.
A quality sparkling wine obtained from an early harvest of the first ten days of September, strictly manual, of an agriculture that has always had the utmost consideration for the environment and its biodiversity.
Vinification and Sparkling wine
A rosé fermentation in temperature-controlled steel vats, followed by a sparkling process with the “long” Martinotti-Charmat method for a duration of no less than 6 months. Filtration will then be carried out to then be bottled in an isobaric environment.
How to match our Moon Rosé brut sparkling wine
A sparkling wine to be served cold, around 4-6 degrees, with aperitifs, appetizers, seafood, vegetarian dishes, meats and cheeses. We imagine it with butter and salmon canapés, sea bass escalope with nettles, linguine with Genoese pesto, chicken stew with peppers, pecorino macetto from Castel del Monte.
