Rosarubra red wine INTIMO I.G.T. Pescara Hills/Aprutini Hills
Sensory notes
Colour: a dark, intense, impenetrable, aristocratic ruby red, with persuasive purple reflections on the edge and an enviable consistency.
Smell: the aromas are vigorous and captivating, with a predominance of blackberry jam, plum, cherry, berries and tobacco leaves.
Taste: the taste is an elegant and sublime concentrate of ripe fruit, perfectly in tune with the sense of smell, to which chocolate, vanilla, coffee and roasting are added. A moderate warmth and an extraordinary softness envelop the mouth, in excellent balance with a freshness and absolutely lively tannins, but velvety, round, never intrusive. A very long, bewitching and delicately almond finish.
Harvesting
Born in one of the most suitable areas of Abruzzo, from ancient vineyards, trained with Guyot and Abruzzese Pergola, at an ideal altitude to guarantee a formidable temperature range and with a magnificent exposure.
Obtained thanks to the extraordinary intuition of combining two particularly synergistic vines, Montepulciano d’Abruzzo and Merlot, both the result of a scrupulous manual selection, of an October harvest, of certified biodynamic agriculture, which guarantees maximum respect for the surrounding environment .
The grapes therefore undergo a slight over-ripening, or rather a slight dehydration which generates an imperceptible concentration of residual sugar, which is a characteristic found in wine and which, together with the impeccable harmony of the olfactory and gustatory qualities, has decreed the incredible success.
Winemaking
A separate and distinct fermentation in steel for the two vines of the blend, Montepulciano and Merlot, then an initial maturation in cement tanks will follow for a few months, at the end of which a second maturation will begin, this time in oak barriques, for about a year. Subsequently, the wine will return to rest in the concrete vats for a further 6 months, to then be bottled and begin aging for at least another 6 months.
How to match our Intimo IGT Colline Pescaresi/Colli Aprutini wine
Intimo is a very good wine, for meditation, a wine to drink when important decisions are about to be made, because it creates such a perfect atmosphere that it clears your mind of bad thoughts.
At a temperature around 16-18 degrees, but also a little more, with a nice capacious goblet with a wide rim, it is advisable to wait a few minutes after opening before serving, just to give it time to open up, to fully express itself , and to bring out all its qualities.
It is a wine that wonderfully accompanies refined aperitifs, refined first and second courses, vegetarian cuisine, medium and long-aged cheeses. Let’s imagine croutons with chicken livers, risotto with mushrooms, partridge with plums, beef cheek, semi-hard pecorino cheese from Atri.
