White wine Pecorino Abruzzo DOC Torri 420
Sensory notes
Colour: A pale straw yellow, characterized by a particular luminosity.
Smell: You are greeted by an impactful intensity, centered on scents of wild flowers, ripe fruit, a delicate spiciness, as well as an irrepressible and persistent herbaceous note.
Taste: It is intense, characterized by an overbearing acidity, softened by the right balance between delicate softness and warmth. You are greeted by hints of yellow-fleshed peach, apple, pear, in a habitat of pungent minerality, with an enthralling lime finish.
Harvesting
Born in one of the most suitable areas of Abruzzo, from an old vineyard raised in Tendone, at an ideal altitude to guarantee a formidable temperature range and with a magnificent exposure.
A Pecorino obtained from a rigorously manual harvest in early September from certified organic farming, which ensures maximum respect for the surrounding environment.
Winemaking
A vinification performed in thermo-conditioned steel vats followed by an aging of 3 months, in cement tanks, to then proceed with bottling in the total absence of oxygen.
Pair with Pecorino Abruzzo DOC Torri 420
A wine to be served cold, at a maximum of 6-8 degrees, with aperitifs, appetizers, seafood, vegetarian dishes, white meats and fresh or medium-aged cheeses.
Let’s think of foods preferably based on fish such as raw seafood or linguine allo scoglio, ravioli di rirra di capra, cannelloni with mushrooms, but also a spit-roasted cockerel, grilled vegetables or a caciotta stracchino from Abruzzo.
