Sensory notes
Colour: A brilliant straw yellow with persuasive golden reflections and a fine and long-lasting perlage.
Smell: Intense and elegant aromas, floral and fruity scents, acacia flowers, broom, peach, green apple, citrus fruits and a delicate bread crust.
Taste: On the palate an intense freshness and a relevant minerality, well balanced by a considerable warmth and a rebalancing softness. Excellent agreement with the sense of smell which is accompanied by slight hints of aromatic herbs, thyme and sage. A lively, fragrant and persistent finish.
Harvesting
The Moon was born in one of the most suitable areas of Abruzzo, from an old vineyard trained on the Guyot system, at an ideal altitude to guarantee a formidable temperature range and with a magnificent exposure.
A quality sparkling wine from Pecorino grapes, obtained from a strictly manual harvest of the last ten days of August, from certified biodynamic agriculture, which guarantees maximum respect for the surrounding environment.
Vinification and Sparkling wine
A fermentation in temperature-controlled steel vats, followed by a sparkling process with the “long” Martinotti-Charmat method for a duration of no less than 10 months. Following the disgorgement (filtration) will be carried out to then be bottled in an isobaric environment.
