Harvesting
Manual harvesting in the third ten days of August from certified organic farming. Perfect exposure and temperature range that guarantee an excellent final product.
Vinification
In thermo-conditioned steel vats, malolactic fermentation and bottling in the total absence of oxygen follow.
Smell
Intense fruits and red flowers of blueberries, plums, currants, berries, but also cocoa and pepper.
Taste
Dry and warm in balance with the right freshness and present but not intrusive tannins. Good body and scents aligned to the nose with soft balsamic hints, decidedly persistent and with a long spicy finish.
Pairings
Serving temperature 16-18°C, perfect for aperitifs, appetizers, roasts and grilled meats, vegetarians, medium-aged cheeses.
